As per LaPavoni 1905 finding coffee is best brewed at a pressure of 8-9 BAR and at a temperature of 195° F It is said that the lower i.e. 8 BAR setting produces a smoother tasting shot that 9 BAR setting. But you get more crema w/9 BAR setting... I like to keep mine at around 9 BAR. As for the temperature setting it depends on who you are talking to. Barista's preferred range varies from 195 to 202 F. I keep mine at 198 F...
