What would you say is the perfect timing? I heard anyway from 12 to 30 seconds. Do you start timing it when you push the button? Any advice will be appreciated.

The timing: most sources say 17-25 seconds. I personally like it at 20-22 seconds. It also depends if you are doing a short or long pour. I start timing when I see the first drop of coffee coming out of the machine.

There are two two types of espresso "pours".  The ristretto, or short pour, is 0.5-0.75oz. for a single shot. The lungo, or long pour, is 0.75-1.25oz.for a single shot. Ristretto is used for straight shots of espresso &  Americanos because is sweeter and more concentrated than lungo. The lungo is generally used for espresso based drinks such as cappuccino or latte.

The volume range given above is what I recommend based on my own experience and my personal preference. You will find short pour definitions ranging from 0.25-1.0oz and long pours between 1.0 and 2.5oz.  It is all a matter of personal preference. Also depends on the equipment you have. Experiment.
