It can be annoying to pay nine to twelve dollars a pound for fresh roasted beans only to have them be stale in three or four days. We have tried everything to keep our beans fresh. Refrigerating them or freezing them seems to choke their flavor. Storing them in airtight containers is much better, however airtight containers lock some of the oxygen and humidity right in with the beans.
